Vinification:
Destalking and crushing of the highly concentrated and ripe grapes, followed by maceration on the skins with the use of enzymes for cold stabilisation. Alcoholic fermentation with selected yeasts at controlled temperatures followed by malolactic fermentation. After 3 weeks from harvesting, the wine is poured into another vessel and left on the yeasts until bottling in Spring.
Ageing capacity: 3 years
Wine:
intense, full-bodied perfume, with more of a floral than vegetal perfume, finely aromatic flavour that is reminiscent of peppers and sage. Sauvignon reaches its balance after a year, with perfumes that are full and constant over time.
Food matching:
Excellent as an aperitif served at 10-12°C, suitable with delicate soups and fish with sauces.
