Harvesting period: first ten days of September
Vinification:
Destalking and crushing of highly concentrated and ripe grapes, followed by maceration on the skins with cold stabilisation. Alcoholic fermentation with selected yeasts at a controlled temperature and subsequent malolactic fermentation. After 3 weeks from harvesting, the wine is poured into another vessel and left on the yeasts until bottling in Spring.
Ageing capacity: 3 years
Wine : Golden yellow in colour with copper reflections. Full-bodied, harmonic wine with well-marked perfumes and flavours.
Food matching : Excellent as an aperitif, served at 10-12°C, suitable with fish starters, delicate soups and grilled fish.
